Masa Pancakes

For months we have searched for a pancake recipe like we had in Guatemala. The best food at La Casa Grande Hotel was breakfast for us and the pancakes were wonderful. Finally I think we have found it give it a try and let us know if you like them. Enjoy.





3/4 cup masa corn flour (not meal)
3/4 cup all purpose flour
1 tsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 eggs
1 1/2 cups milk
3 tbsp. corn oil

Mix dry ingredients in a large bowl. In a small bowl, whisk eggs, milk and oil. Pour into dry ingredients and stir until blended. Let mixture sit for 5 minutes to soften the masa and stir again. Batter should be thick. Heat a skillet over medium heat and add 1 tbsp. corn oil to the skillet. (I use a non-stick griddle and no oil) Pour a 1/3 cup batter into the skillet and use a spoon to spread it into a 4 1/2" circle. Repeat until batter is gone.

First Visit to the Memphis Zoo

Sunday, February 1 was such a beautiful "spring like" day here in Memphis so we decided to have our first adventure at the zoo. Ozzy loved the animals, mostly the bears and monkeys. Enjoy the slide show above.
